Today, my brother asked me to prepare lunch for him and dad. Something very light with no rice or bread as he's trying to lose some weight.
The first thing that popped into my mind was, frittata. I love baking it. Frittata is like a symphony that can be composed by so many instruments (ingredients.)
The key element of a successful and fluffy frittata is whisking the milk and the eggs very well letting the air incorporate smoothly.
First you combine your ingredients in a skillet (stove top) till everything is perfectly combined and cooked.
Then add your whisked eggs and milk.
Scarpe the sides and bottom.
When the eggs are almost cooked but not entirely (still wet from top) stop scraping.
Remove the skillet and shove it under the broiler till the top browns.
** you can add cheese on top.
** remember your salt and pepper.
** you can include all sorts of veggies.
Today I made veggie frittata with turkey and tiny cheese bombs.
